One Pot Chicken

4 Servings




  • A large chicken

  • 3 tbsp of olive oil

  • 1 tsp of lemon juice

  • 1tsp of honey

  • Salt and pepper

  • 1 onion finely chopped

  • 2 cloves of garlic, peeled but left whole

  • 200g baby carrots

  • 200g new potatoes, halved

  • 300ml of vegetable stock

  • 300ml of white wine



Put oven on to gas mark 6 or 200.

Step 2

Put chicken in an ovenproof dish and drizzle over the oil, lemon juice, honey and seasong (rub well in to all of the chicken

Step 3

Roast for 30 minutes

Step 4

Add vegetable stock and wine along with the carrots and potatoes (you can use half partsnips and half carrots if you wish to)

Step 5

Cook for a further 45 mintues (or what is suggested on the chicken label)

Step 6

Remove chicken and vegetables and cover with foil.

Step 7

Boil stock to reduce it down slightly or make gravy by anding flour and water.
